If I don't want to use the BETA, can I still use my Apogee USB interface without the Apogee Software?
Yes!
For now, you can still use your Duet USB on M1 Macs without any Apogee software installed. Just connect it to the computer and it will use an Apple USB audio driver to automatically recognize it. You can control the inputs and outputs using the physical knob, and the controls in Mac System Preferences > Sound or the Audio MIDI Setup utility app.
How to I access settings only available in Maestro, i.e. 48V phantom power?
For settings only available in Maestro, you will have to connect your Apogee USB Interface to an Intel Mac or an iPad/iPhone and use the Maestro apps there to access those settings.
